Traditional Amish Strawberry & Custard Pie — A Family Favorite

This sweet treat from my Amish Desserts Cookbook is Amish Strawberry Vanilla Pie — a buttery, flaky crust filled with silky vanilla custard and fresh strawberries. This refreshing pie is a delightful blend of creamy and fruity flavors, perfect for any occasion.

Amish Strawberry Vanilla Pie

For the Crust:

  • 1 pre-made pie crust (or homemade)

For the Filling:

  • 1 cup granulated sugar

  • ¼ cup cornstarch

  • ¼ teaspoon salt

  • 2 cups whole milk

  • 3 large egg yolks, beaten

  • 2 tablespoons unsalted butter

  • 1 tablespoon vanilla extract

  • 2 cups fresh strawberries, hulled & sliced

Instructions:

  1. Pre-Bake the Crust – Place pie crust in a 9-inch pie pan. Preheat oven to 375°F (190°C). Line crust with parchment & weights, bake 15 minutes. Remove weights and bake 10–12 more minutes until golden. Cool completely.

  2. Make the Vanilla Custard – In a saucepan, whisk sugar, cornstarch, and salt. Gradually add milk. Cook over medium heat, stirring constantly, until thickened. Boil for 1 minute, then remove from heat.

  3. Temper the Eggs – Whisk ½ cup of hot custard into beaten egg yolks, then return to pan. Cook 2 more minutes, stirring. Remove from heat and stir in butter and vanilla. Let cool slightly.

  4. Assemble the Pie – Arrange sliced strawberries in the cooled crust. Pour the custard over them, spreading evenly.

  5. Chill – Refrigerate for at least 4 hours until set.

  6. Garnish & Serve – Top with extra fresh strawberries before slicing.
