This sweet treat from my Amish Desserts Cookbook is Amish Strawberry Vanilla Pie — a buttery, flaky crust filled with silky vanilla custard and fresh strawberries. This refreshing pie is a delightful blend of creamy and fruity flavors, perfect for any occasion.
Amish Strawberry Vanilla Pie
For the Crust:

1 pre-made pie crust (or homemade)
For the Filling:

1 cup granulated sugar

¼ cup cornstarch

¼ teaspoon salt

2 cups whole milk

3 large egg yolks, beaten
-
2 tablespoons unsalted butter

1 tablespoon vanilla extract

2 cups fresh strawberries, hulled & sliced
Instructions:

Pre-Bake the Crust – Place pie crust in a 9-inch pie pan. Preheat oven to 375°F (190°C). Line crust with parchment & weights, bake 15 minutes. Remove weights and bake 10–12 more minutes until golden. Cool completely.

Make the Vanilla Custard – In a saucepan, whisk sugar, cornstarch, and salt. Gradually add milk. Cook over medium heat, stirring constantly, until thickened. Boil for 1 minute, then remove from heat.

Temper the Eggs – Whisk ½ cup of hot custard into beaten egg yolks, then return to pan. Cook 2 more minutes, stirring. Remove from heat and stir in butter and vanilla. Let cool slightly.

Assemble the Pie – Arrange sliced strawberries in the cooled crust. Pour the custard over them, spreading evenly.

Chill – Refrigerate for at least 4 hours until set.

Garnish & Serve – Top with extra fresh strawberries before slicing.
